Dark Chocolate Mint Lave Cake

Preheat the oven to 425 F. Spray 4 custard cups with baking spray and place on a baking sheet.
Melt the ghee and chocolate and whisk until smooth. Remove from heat and mix in the sugar until well blended. Whisk the eggs and egg whites together and add to chocolate mixture. Add vanilla and optional mint. Mix in the flour. Divide evenly between custard cups.
Bake until all sides are firm and centers are soft, about 13 minutes. Let stand for 1 minute to help firm.
Dust very lightly with powdered sugar, top with berries and mint leave.
